What Is a Croissant

This crescent-shaped pastry is a layered bakery product that, if properly prepared, offers a flaky and crispy texture. The steam of the buttery layers adds to the richness and tenderness of the inside of the croissant and provides just the right crispiness on the outside. 

When & How It Was Originated?

While you can enjoy a freshly baked croissant at our artisanal bakery in Vaughan, the origin of the pastry is believed to be Vienna in 1683. During a Turkish invasion, late-night baker Peter Windletter notified authorities of the siege. 

To commemorate the victory against the troops, he was appointed to create a symbol of the Ottoman Empire. He chose to bake a pastry in shape of the flag’s emblem, the crescent. Nearly 100 years later, Vienna-born Marie-Antoinette d’Austriche became the Queen of France and introduced the delectable croissant to the country. 

How Did the Kipferl Become a French Croissant?

A kipferl is often interchangeably used to describe a croissant. The Austrian-based kipferl is a crescent-shaped dense pastry made with brioche dough. Over the past century, the kipferl dough was replaced with laminated leavened dough, which mimics the croissant recipe in various countries such as France. The authentic kipferl calls for less butter and offers a sweeter taste.
